  • Person in charge is not verifying proper cold hold temperatures of the various reach in coolers and the walk in cooler.
  • Observed several temperatures that were above their maximum cold holding temperature in the reach in cooler and in the walk in cooler.
  • Notes: As discussed, a log must be kept of each of the refrigeration units. At least three temperatures a day must be taken in each of the units and noted in the log. Temperatures should be taken of the food products not the ambient air temperature. Temps should be taken with a probe type thermometer wiped clean with a sanitizing solution between each temperature check. This log will help ensure proper temperatures are maintained and give quick notice when the cooler isn’t working properly to maintain proper temperatures.
  • This is a follow-up to a previous inspection.
