Chocolate Freekeh Muffins

For the muffins

  1. 1 cup cooked freekeh
  2. 1/2 cup coconut flour
  3. 3 heaped teaspoons baking powder
  4. 2 cups almond milk
  5. 2 eggs
  6. 2 teaspoons cinnamon
  7. 4 tablespoons cocoa
  8. 3 tablespoons brown sugar
  9. pinch of salt
  10. hand full of semi sweet chocolate chips
For the chocolate-coconut butter disks/hats
  1. 8 tablespoons coconut butter
  2. 2 tablespoons brown sugar
  3. handful of semi sweet chocolate chips
  4. Directions:
  5. For the muffins
    1. Preheat oven to 375 degrees
    2. Grease a muffin pan
    3. Mix all the ingredients in order of listing (except the chocolate chips), till well incorporated and pour into greased muffin pan and top with chocolate chips
    4. Bake for 20-22 minutes
    5. Let cool
    For the chocolate-coconut butter disks/hats
    1. Melt the coconut butter, brown sugar and chocolate chips in a pan over very low heat
    2. Place 2 tablespoons in cupcake holders and place in fridge to set
    3. When muffins are done and cooled, place disks/hats on top
    Notes
    1. When these muffins are allowed to cool, they taste a lot sweeter than when they are warm out of the oven - unless you up the sugar.
