County Jail Receives Failing Score from Health Inspectors

The Gwinnett County Detention Center was cited for numerous food service violations.

You might not expect the food to be gourmet at the county jail, but failing a health inspection is another story.

According to the health department, the kitchen at the Gwinnett County Detention Center received a failing score recently by a county health inspector.

The score: 58 (failing is 69 or below).

The Dec. 11 inspection at the center, located at 2900 Ga. Highway 316, cited numerous violations, including live roaches, unprotected food and employees failing to follow personal sanitary procedures.

Here’s a look at the inspector’s observations:

  • Person in charge not demostrating responsibilities to prevent public health risk factors. Educated person in charge on responsibilities.
  • Observed employees touch and adjust hair then begin prepping food without changing gloves and washing hands.
  • Observed employee drinking from a water bottle then returned top to bottle before handling foil.
  • Several storage pans and serving trays not cleaned to sight and touch.
  • Sanitizing solution for dishwashing procedure not meeting adequate concentration.
  • Hot-held potentially hazardous foods (hamburgers, turkey soup, and chicken wings) not maintained above 135F.
  • Potentially hazardous foods prepared from products at ambient temperature (chicken salad, egg salad, sliced tomatoes, and tuna salad) not cooled to 41F within 4 hours.
  • Several working bottles of chemicals not labeled with common name.
  • Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.).
  • Food on display not protected from contamination. Food relocated under protective devices.
  • Dispensing utensils not adequate for several self-service items.
  • No public notice informing consumers to use clean tableware for self service. A public notice informing consumers to use clean tableware shall be posted in a conspicuous place in the self-service area.
  • Several employees observed wearing jewelry (watches) other than a plain ring while preparing food.
  • After cleaning and sanitizing, several pans and utensils stacked wet.
  • No hot water at hand washing sink.
  • Observed several live roaches inside hot-hold unit.
