Observations: Tongs used on raw chicken was stored in water that was 145°F with tongs used for seafood and beef. Raw chicken was stored above raw fish in a cooler. Unwashed pineapple and avocados were stored over other ready-to-eat foods in the walk-in cooler. Both cooked and raw chicken were stored in the walk-in cooler uncovered. Equipment (slicers, measuring cups, sheet pans, fryer baskets, etc) that were stored as clean were observed with food debris remaining. Mini burgers and fajitas are allowed to be served under cooked (cooked to less than 155°F). However, the menu lacks the linking asterisk next to the Mini Burgers and the steak fajitas lacks a consumer advisory altogether. Boxed foods were stored under the fan unit of the walk-in freezer. Ice has accumulated on the exterior surfaces of the boxes. Wet wiping cloths were stored in sanitizer that was oily with food debris. Avocados are not washed before being cut (and the stickers remain on the food). Equipment was stored stacked wet. The gaskets of cooler doors and cooler door frames were observed with food debris. Stickers were observed on the exterior surface of clean equipment. Ice build up in the walk-in freezer. Rust build up were on the shelving in a cooler. Fan grates in the walk-in cooler and freezer were observed with dust on them.
