Sanitizer bucket stored above pizza boxes. In use pizza slicer stored between prep board and prep cooler. Knives stored under microwave. In use utensils should be stored away from contaminated areas that are hard to clean. Food debris buildup in door of sliding cooler.

Observations: Employee handling baked biscuits with bare hands. Ice machine contained mold-like substance buildup inside machine. Cold-held potentially hazardous foods not maintained below 41F; no time controls/documentation in place. After discussion with CFSM and other manager, sliced tomatoes and sliced/shredded cheese held under Time as a Public Health Control and marked for four (4) hour hold time. Sliced cheese and shredded cheese were not marked according to written procedures with sticker that contains start and discard time. Cut lemons placed at drink station for customer self-service in container that requires customers to remove lid and provides no further shielding/protection from contamination (ex. sneeze guard). Garbage receptacle sliding doors left open and not in use. Lids and doors shall be kept closed when not in use.
