A Mall of Georgia-area restaurant was cited for a long list of violations in a failed health inspection this week.

Saigon Cafe, located at 3380 Buford Drive, graded only a 44 (out of 100) in a Wednesday, July 22, inspection conducted by the Gwinnett County health department. Any score 69 or below is considered unsatisfactory in Gwinnett County.
The restaurant was cited for violations ranging from employee cleanliness to lack of managerial control.

Here’s a rundown of the July 22 violations, according to the inspection report.
- No active managerial control. Violations for hand washing, using a hand sink, food in good condition, safe and unadulterated, food separated and protected, proper cooling time and temperature, cold holding (amongst other good retail practices) were observed today.
- Employee used his gloved hands to handle raw beef, then removed his gloves & went to handle ready-to-eat food without washing his hands. Had employee wash his hands.
- Multiple employees were using improper cleaning procedure when washing their hands: cold water, less than 5 seconds, etc. Training provided; hand washing demonstrated.
- Observed employee drinking from a cup with no lid & no straw
- A fan on a metal tray was stored directly on top of the cookline hand sink. Fan & tray removed; hand sink made accessible.
- A minimum of 8 dented cans of food found in dry storage. Cans were placed temporarily on the dry storage room floor & labeled do not use.
- Ice crystals found on loosely covered containers of spring rolls that were stored in the chest freezer - ice accumulation inside the chest freezer has adulterated the food. Food discarded.
- Unwashed fruits and vegetables not separated from ready-to-eat foods in the walkin cooler.
- Cold-held potentially hazardous foods not maintained below 41oF; no time controls/documentation in place.
- Cooked potentially hazardous foods not cooled from 135F to 41F within a total of 6 hours.
- Ineffective cooling methods used to cool food: cooling at room temperature, cooling in cold top coolers which are not designed to cool food (they are designed to hold food cold), deep containers, covered containers, plastic containers, etc.
- Facility is reusing their single use food containers.
- Employee’s hair was not fully restrained while she was preparing food; her bangs were loose.
- Ice buildup & condensation leak in the walkin freezer, on the food boxes, on plastic food container & on plastic wrapped chicken. Broken wires on fry basket.
- Food stored under ice buildup/condensation leak: in the walkin freezer & in the chest freezer.
- Ice accumulated inside the chest freezer (needs to be defrosted & cleaned).
Saigon Cafe scored 85 (Feb. 27) and 80 (Jan. 1) in its most recent previous inspections.
It has previously failed two inspections: June 3, 2014 (61/U) and April 11, 2011 (63/U).
