Observations: Food contact areas of the ice machine with black mold like substance present. Multiple potentially hazardous foods not being maintained at 41 F or below in the prep cooler at the grill area (no time control documentation). At the beginning of the inspection, sushi rice was not labeled with the start time/discard time and current date as per the written policy. Employee working at the grill area not wearing hair restraint (hair was longer than 1/2 inch). Prep cooler at the grill area was maintaining an ambient air temperature of 57 F.

Some food containers were overstocked; food was above the fill line. PIC stated he turned the coolers on & stocked them around 7:20-7:30am. Advised to turn coolers on upon arrival & stock coolers once they are able to hold food at 41F or below.

Observations: Wiping cloths stored in <50ppm chlorine sanitizer. Sanitizer solution adjusted. Employee rinsed a metal colander, in the dish sink, using only water, & then placed it on top of clean dishes on the storage shelf. Soap & sanitizer were not used. Cooked potentially hazardous foods not cooled from 135F to 41F within a total of 6 hours. Wontons in the reachin cooler, cooling since yesterday, measured 44.4F, 44.3F, 42F. Wontons were cooling, in a Styrofoam container, in the reachin cooler. Food discarded. Rice utensils were stored in a container of room temperature water, near the rice cooker. Utensils taken to dish sink to be cleaned. Solid back door left open; door doesn’t self-close.
