In keeping with my gluten-free lifestyle, and since I need food for a long day tomorrow, a created a snack that will last several days, hopefully. It has about 5 grams of sugar per tablespoon, and I am setting a tbsp. as a serving.
Since I had raw sunflower seeds in my refrigerator, I put some in my spice grinder to make "flour". After several small batches, I had about 1 cup of ground seed flour. To the 1 cup of seed flour I added 3 Tbsp. of honey, 1 Tbsp. of coconut oil, 1 Tbsp. of coconut butter, and 1 Tbsp. of cinnamon. After mixing completely (often using the back of a spoon to 'marry' the ingredients, I carefully measured 1 Tbsp. at a time and made patties with my hands. After placing them in a plastic container with wax paper between the layers, into the refrig. they went.....all 12 of them...well, I ate one or two first. I can't say they are 'tasty' in terms of super sweet, but I like them. You could make these with any kind of ground seeds or nuts.....sesame seeds, almonds, pecans, walnuts, etc.
These will, at least, help get me through my long day tomorrow, along with my raw fruits and veggies.
