Observations: Person in charge not maintaining active managerial control over establishment and its employees regarding food safety practices (cross contamination, handwashing, etc.). Employees changing gloves, not washing hands before donning new gloves & working with food. No paper towels at dishwasher area handwashing sink. Had facility supply paper towels. No soap at handwashing sink in bar area. Cross contamination: Employee handled contaminated handle to fryer basket (had raw seafood) and then handled ready to eat shrimp on plate. Shrimp plate discarded. Cold-held potentially hazardous foods not maintained below 41F; no time controls/documentation in place. Cut tomatoes on time as control for food safety not documented with time when removed from temperature control. Multiple employees were wearing jewelry (watches, bracelets) while handling preparing food (bar, kitchen). Dishes were stacked wet in the dish area. After cleaning and sanitizing, equipment and utensils shall be air-dried. Employee contaminated gloves with raw seafood and then handled ready to eat shrimp. Employees preparing produce at warewashing sink surface. A warewashing sink may be used for thawing and preparing foods other than fruits and vegetables if the sink is cleaned and sanitized prior to use and the food is placed in a clean colander or pan.
