Observations: Person in charge is not performing their duty to prevent risk factors. Unapproved employee drinks being stored under dishwashing machine. Serving raw crab without parasite destruction letter. Found numerous dishes and containers with food debris. Items where recleaned. Cooked pork being reheated for hot-hot not reheated to 165 F within two hours. Food being stored in reused boxes; food being stored under sink; and vegetables being stored in open boxes. Food should not be stored under sources of contamination or reused boxes. Dirty shelves on small storage cart walk-in cooler racks are deteriorated with chipping paint, reach-in 2 door refrigerator dirty with food debris. Floors missing tiles and grout.
