Observations: Observed employee handling ready-to-eat imitation crab with bare hands. Employee drink without lid and straw found in hibachi station stored with clean plates and also in ware washing area stored above clean dishes. Unapproved employee drinks were discarded at the time of the inspection. Observed employee washing hands in sink other than hand washing sink. Facility has several sushi rolls that are served with raw fish or fish eggs. The label indicating the name of the roll had the required asterisk, but there was no sign with reminder statement and consumer advisory to inform customers. Several potentially hazardous items in 3 dr cooler located in kitchen area and also in prep cooler located in sushi area were above 41F. Raw cabbage being washed in a sink not intended for washing fruits and vegetables. Rice scoop stored in standing water not at a temperature of 135F or above. The space between all fryers has a build up grease and dirt. Shelving throughout the entire kitchen has a build up of dirt and debris. The bottoms of cooler and freezer have an excessive build up food debris. Gaskets around all cooler and freezer have build up food debris.
