Grainless BLTs: A Great Summer Treat
Even if you've given up grains, you can still enjoy the ultimate summer treat...a BLT!

Seeing all of the beautiful heirloom tomatoes this week at the farmers market made me think of only one thing ... BLTs! But because I no longer eat grains, I thought that was one summer delight I would not enjoy this year. When I found this lettuce wrap recipe, I could not wait to try it.
Ingredients
- 1 lemon, juiced
- 1 ripe avocado
- 1/2 red onion
- 2 large heirloom tomatoes
- salt
- 1/2 package of bacon
- 1 head of iceberg lettuce
Instructions
- Dice avocado, chop onion, cube tomatoes and mix together with lemon juice in a bowl. (If your not on a diet, add a little dollop of Duke's Mayo). Store in the fridge while preparing the rest.
- Cook the bacon until crispy and drain.
- Fill a lettuce leaf with a piece of bacon, add tomato mixture, roll up and eat.
- Wash it down with sweet tea and repeat until you have to unbutton the top button on your pants!
- YUMMMM....tomato heaven!
