• No conspicuously located thermometer in walk in cooler and the two reach in freezers within the main kitchen. A temperature measuring device must be provided and readily accessible for use in ensuring attainment and maintenance of ambient temperatures.

• At time of inspection observed food products in prep top cooler/reach in unit (all three) out of temp (chicken at 54 F, lobster at 53 F, fish at 49 F, scallops at 46 F, beef at 52 F, cauliflower at 45 F, rice at 46 F, pasta at 47 F, beef at 50 F and shrimp at 49 F). Cold holding items must be maintained at a temp of 41 degrees and/or below. Advised PIC to discard all food items. Records do not reflect initial temps taken at 11 a.m.
• At time of inspection observed inconsistent use of thermometers in cold holding equipment. Thermometers failed to send email when food items were not in temp. Advised PIC to replace.
• At time of inspection observed heavy build up on cutting surfaces of prep boards in main kitchen. Advised PIC to replace in order to prevent contamination of food items.

• Observed several cutting boards with deep cuts and with black like substance in them. C/A: Cutting boards need to be replace.
• Observed the reach in cooler not in good repair. The RIC ambient was 60 for cold hold. Food items that were made today were moved to the Walk in cooler and the RIC will be repaired.
• Remarks: spoke with manager about new food rules.
