- Food temped on the line was not in the proper temp and not supported by a time log; hot holding must be 135 degrees or higher; if supported by a log then the log must be able to track each pan/food item on log;
- Observed raw shell eggs on shelf that were not pasteurized as required in a health care facility; and
- Deli box housing sandwiches at 50 degrees; do not use until unit is at least 39 degrees.
