Know Before You Go: El Zarape Fails Food Service Inspection

The Fulton County Department of Health Wellness conducted food service inspections April 22-29 at the following north Fulton establishments:

April 27, 2015 Score: 76, Grade: C

• Observed kitchen staff cutting vegetables to be used in salads with bare hands (kitchen staff put on gloves once inspector announced).
• Observed chemical bottle stored on shelf with dishes; chemicals must be stored in designated area.
• Observed frozen food thawing at room temperature improperly; thawing must be in cooler or under running water.
• Do not store food on the floor; must elevate food/supplies at least six inches; do not store opened canned food items in can; once opened canned food must be transferred to a food storage container.
• Only use a scoop with a handle for scooping; observed storage bowl stored in bulk food container as a scoop.
• Observed a large amount of standing water in bottom of line prep cooler; identify source and eliminate.
• Observed entry door propped open without protection; provide either an air curtain or screen; otherwise, keep door closed.

• Observed mold/dirt build up in the reach-in freezer and some of the mold/dirt on the food items in the reach-in freezer.
• Observed no/improper date marking of many food items in the walk-in cooler and the reach-in freezer.
• Observed no labeling of food items in the RICs, RIFs and the WIC.
• Observed cut/pierced fruit improperly stored
• Observed the RIF in disrepair.
• Observed personal items being stored with food items.
