Know Before You Go: Food Thawing in Standing Water, Raw Meat Placed on Bread
Food 101 and Waffle House in Sandy Springs both failed their most recent food service inspections.

The Fulton County Department of Health Wellness conducted food service inspections April 14-22 at the following north Fulton establishments:

- Observed cook staff handling ready to eat food with bare hands improperly.
- Personal beverage in improper container (soda can) observed stored on prep cooler with food and dishes. Personal beverages must be in a container with a lid and straw
- Observed improper food storage throughout the facility on line: Raw meat stored directly next to ready to eat on top of prep cooler; Raw meat on top shelf above ready to eat items on inside of line cooler; Raw meat directly on top of bread in walk-in freezer; Raw shell eggs above tray of ready to eat items which was stored next to raw meats.
- Facility could not locate the required tags for shell fish.
- Observed food thawing in standing water.
- Provide protection for ice bin on server line next to hand sink. Hands washed is splashing in ice; Do not use retail bags as food storage bag.
- Clean storage must be in clean containrs. Oberved many dirty/greasy storage containers.
- Straws and stirrers must be individually wrapped/protect stored coffee filters.
- Reach-in cooler on line to the right of the grills has a large amount of standing water in the bottom. Identify source and eliminate as standing water is unsanitary
- Clean all storage shelves in facility; clean all equipment surfaces inside and out; clean all counter/shelf surfaces in facility

- Observed a bottle of water stored on server line with food and supplies. Personal beverages must be in a container with a lid and straw;
- Line cooler thermometer indicates unit is too warm. Additionally raw beef temped in unit indicated 45 degrees. All cold food storage must maintain 41 degrees or lower even during hottest/busiest time of day.
- Food thermometers must be cleaned/sanitized in between different food items temped; do not store personal cell phones on line with food and supplies.
- Facility did not post the most recent score sheet as required.
- Invert all clean storage.
- Observed both the facility window at bar and patio screens in open position. Openings must be protevted by air curtains or screens. Otherwise openings must be closed at all times.

- Observed raw shell eggs stored improperly throughout the facility. Same as with raw meat, raw shell eggs must never be placed above ready to eat foods or any food with a lower bacteria load.
- Dishwasher rinse cycle did not reach required 180 degrees.
- Eggs in basket for use on line were not labaled as required per WH policies. Food that is not supported by time must remain cold; after inspection began, and the eggs chart was blank, it was then falsely filled in with a start time of 8 a.m. (Inspection began at 10:30 a.m.) Time chart must be completed at the time the product is placed out. Entering an earlier time later is prohibited.
- Provide unit thermometers for all coolers including drawer unit.
- Observed line cook handle raw bacon, raw shell eggs and then handled waffle batter container and scoop with same gloves on; Observed hand sink used to rinse nasty cloth (cloth being used to clean nasty equipment); No sanitizing solution used to clean equipment;
- Posted permit is expired.
- Observed filters stored unprotected (in container with no lid)
- Observed a line cook wash gloves and returned to cook line
- All of the equipment in this facility is nasty and un-sanitized. Clean every piece of equipment inside and outside. This includes inside cabinets and behind equipment.
- Clean entire facility top to bottom and front to back. This includes under and behind equipment as the whole kitchen is nasty.
