• Observed four dented cans of Bundin De Chocolate and one can of Pasta De Tomate on the canned food rack located within the main kitchen. Food must be safe, unadulterated, and honestly presented. Advised PIC to dispose of the five dented cans.
• Observed no thermometers located within the reach-in coolers and freezers throughout the facility. In a mechanically refrigerated unit, a temperature measuring device must be conspicuously located to measure the air temperature in the warmest part of a mechanically refrigerated unit.
• Observed rusting and heavy accumulation of food residue on the cutting/piercing portion of the can opener located in the main kitchen. Equipment food-contact surfaces and utensils shall be clean to sight and touch and the cutting/piercing parts of can openers must be readily removable for cleaning and for replacement. Advised PIC to remove can opener from the prep table to be washed, cleaned, and sanitized.
• Observed accumulation of food debris on the bottom of the reach in freezers located in the main kitchen. Nonfood-contact surfaces of equipment must be kept free of an accumulation of dust, dirt, food residue, and other debris. PIC advised to monitor the accumulation of food residue especially during periods of high activity, within the reach in freezers, and clean as needed.
