Dish machine failed to dispense sanitizing solution. Advised that facility discontinue use of machine and begin using 3-compartment sink to sanitize dishes.
• Observed failure to adhere to a consistent date marking system for foods held in cold holding units throughout main kitchen. All fully cooked/ready-to-eat foods that have been held for over 24 hours must have a date marking on them.
• Observed tomatoes stored in an open can. After a canned food has been opened, the remaining food must be stored in a food grade container.
• Observed failure to have a food service permit posted that is current and not past its annual fee due date.
• Observed hand sink being used for vegetable prep. Equipment must only be used for it's intended purpose.
• Observed build up of debris along the interior of prep top cooler, reach in cooler, and equipment throughout main kitchen area. All nonfood contact surfaces must be cleaned so as to be free of debris.
• Observed failure to have consistent hot water at hand washing sink throughout facility. Must fix so that hot water is always readily available.
• Observed build up of debris on floors, walls, and ceilings throughout main kitchen area. Must clean.
• Observed hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling. Must clean and fix.
