COS: The PIC was advised to place the shredded cheese into the walk in cooler to immediately cool down to 41°F. The PIC was advised to discard the remaining food items and advised that all cold held TCS foods must be maintained at a temperature of 41°F and below.
• Observed the ambient air temperature of a reach in cooler located in the front food service area at 56°F. The PIC was advised to repair/adjust the temperature settings of the reach in cooler to 41°F and below to ensure that all cold held TCS foods are maintained at the proper temperatures.
• Observed a can opener attached to a prep top counter with an excessive accumulation of old encrusted food debris. The PIC was advised to thoroughly clean the can opener and advised that all food and nonfood-contact surfaces must be cleaned and maintained.
• Observed an excessive accumulation of old food debris on the floors throughout the facility in the front food service, main kitchen and walk in cooler areas. The PIC was advised to thoroughly clean the floors and advised that all floors, walls and ceilings must be cleaned, maintained and in good repair.
• Observed failure to properly store employees personal items. Observed multiple employee food containers/bags stored on multiple shelves throughout the walk in cooler with food that will be served in the facility. COS: The items were removed and relocated and the PIC was advised that all employees personal items must be stored properly.
