• Observed dented can stored with canned foods set for public consumption. Dented cans may not be used.
• Observed wet wiping cloths not stored in sanitizing solution between uses throughout main kitchen area. Item was corrected onsite.
• Observed chlorine dish machine failure to dispense sanitizer at correct concentration. Maintenance must be performed. Advised that facility discontinue use of machine until maintenance is performed and to begin using three compartment sink exclusively.

Food must be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables. Food employee placed the containers of raw chicken on the bottom shelf of the reach in cooler as well as placed the containers of raw tilapia and raw shrimp above the containers of chicken.
• Observed uncovered bell peppers within reach in cooler, in the main kitchen area, and subject to contamination. Food must be covered and therefore protected from cross contamination while in storage. Food employee covered the container of bell peppers.
• Observed uncovered string beans within the reach in cooler, in the main kitchen, and subject to contamination. Food must be covered and therefore protected from cross contamination while in storage. Food employee covered container of string beans.
