• Observed severe build up of debris along ventilation hood in main kitchen area. Must be cleaned.

• Observed several items in walk-in cooler and front food service drawer cooler failing to maintain cold holding temperatures of 41 degree F (see "Temperature Observations"). Food within time/temperature range to cool were placed on ice. Items outside of range were discarded onsite. Discussed with PIC methods that could be used to ensure that cold held foods are maintaining required temperatures.
• Observed 3-compartment sink not properly set up (wash, sanitize, rinse). No dishes had been or were being washed during observation. Center sink was drained and sink with rinse water stored had sanitizer added.
• Observed build up of food debris along nonfood contact surfaces in kitchen and front food service. Must be cleaned to sight and touch.
• Observed broken light cover over 3-compartment sink. Must replace.
