C/A: Pasta salad was thrown away, cut tomatoes were switched with cut tomatoes in the Walk in cooler. The items were not cooled down properly before putting them on the salad bar. Suggestion: Once food items are prepped put them in Walk in Freezer to rapidly cool them down before serving. Corrected On-Site.
• Observed fruit and vegetable sink being used for purposes other than washing fruits and vegetables. The sink was being used for meat prep. C/A: They have a 4 compartment sink. Told them to use one of the compartments for the meat sink. And label.
• Cutting boards grooved/pitted and no longer cleanable. Must replace all cutting boards.

• Observed several time/temperature control for safety (hot holding) at the hot serving line with temperatures below 135 degree Fahrenheit. (Cooked fish 130, corn nuggets 119) C/A: Items will be discarded at the end of lunch at 2 p.m.
• Remarks: Spoke with manager about the new food rules. Gave manager Fulton Environmental Health information to contact about the approved food source. Food items that are being received from another place must be placed on hold and not serve to the public until the department gets information on the other restaurant.
