• Observed cooked beef in Bain Marie unit (3) at 89 degrees F/failure to adequately hot hold food. All hot held foods must maintain a temperature of 135 degrees F or higher. Advised that remaining food be discarded.
• Observed items in cold holding units without date marking. All ready-to-eat, temperature controlled foods that have been held for over 24 hours must have a date marking.
• Observed food left to cool at room temperature. After fully cooked food falls out of hot holding temperature (less than 135 degrees F) food must cool in a cold holding unit or on ice. Advised that rapid cooling measures be enacted.
• Upon entry into kitchen, observed containers of food stored on the floor. Everything must be stored at least 6 inches off the floor.
• Observed failure to have test strips for sanitizing solution.
• Observed wet wiping cloth left on counter, must be stored in a sanitizing solution when not in use.
• Observed failure to maintain warewashing facilities.
• A follow-up inspection is scheduled for Feb. 17.
