• Observed multiple foods hot holding at temperatures under 135 degrees F. CA: Foods were reheated back up to 165 degrees F before placing back into the hotboxes. Corrected On-Site.
• Observed multiple potentially hazardous foods at the salad bar line not properly marked as a time as PH control food. CA: Use tickets to identify the time as PH control foods.

• Observed failure to have and sink near dish machine stocked with paper towels. All hand sinks must be accessible and stocked with soap and paper towels. Corrected On-Site.
• Observed raw shelled eggs stored above ready to eat chili and juice items in reach in cooler. Foods must be stored in the correct, descending order so as to prevent cross contamination.
• Observed failure to properly wash dishes in 3-compartment sink. Dishes washed, sanitized, and then rinsed. Dishes must be washed, rinsed, and then sanitized and the sanitized dishes must be allowed time to air dry.
• Observed fish cooked on 7/19/2017 with a cold holding temperature of 52 degrees F. Foods have 2 hours to cool from 135 degrees F and 70 degrees F, and then an additional 4 hours to cool from 70 degrees F to 41 degrees F or lower. Item was discarded onsite.
• Observed incorrect date marking on foods stored in reach in cooler #1. All ready-to-eat/fully cooked items that have been held for over 24 hours must have a label and date marked for the "made-date" or "discard by date."
• A follow-up inspection will be held Aug. 3.
