Observations: Employee handled raw beef and put on grill with gloved hands. He took off the contaminated gloves and discarded them into the trash can. He then immediately put on a new pair of gloves without first washing his hands. Food employees not washing hands at a frequency to prevent contamination of food and/or equipment. Back handwash sink was blocked by large container of rice. Front handwash sink was blocked by large roll of plastic wrap. Dining counters/tabletops not cleaned and sanitized by correct methods. Dining room tables were being cleaned by using one wiping cloth, from back sanitizer bucket, and was used to clean multiple tables at one time without rinsing in sanitizer between tables. Employee took money and layed it out on the prep table where food is prepared. Chicken not cooked to an internal temperature of 165oF or above for 15 seconds. Whole intact beef steak was not cooked to an internal temperature of 145oF or above for 15 seconds, as required. Cold-held potentially hazardous foods not maintained below 41oF; no time controls/documentation in place. Hot-held potentially hazardous foods not maintained above 135oF; no time controls/documentation in place. In-use cutting boards being stored underneath counter in a small space on top of the prep cooler. This is not a sanitary area to store the cutting boards. Nonfood-contact surfaces of equipment not cleaned at a frequency necessary to preclude accumulation of soil residues. Outdoor enclosure for dumpster/compactor not maintained in good repair and/or not clean.
