Observations: Employee water bottle stored on the prep table next to and above food. Employee water stored on top of the upright cooler, next to clean utensils. Employee drinking from a multi-use cup, with no lid and no straw. No paper towel at the front of house hand sink & in the men’s restroom. Raw pork, raw ground beef stored above ready-to-eat food (cheese, cooked pork, chicken soup, etc) in the upright cooler. Raw fish stored above bread, beans in the upright freezer. Unwashed produce stored above ready-to-eat food (sauces, milk) in the front of house cooler. Chicken soup not cooled within 6 hours: soup was made last night; 48F center of food, 44F at the edge. Soup discarded. Chicken soup cooling in a deep, covered container in the upright cooler, below food held cold. Soup discarded because it didn’t cool to 41F within 6 hours. Cases of soda stored on the floor, below the front of house hand sink. wo employees were preparing food without adequate hair restraints. Employee was using painted grocery bag, in direct contact with food, while prepping food (hallacas). No test kit available for measuring sanitizer concentration. Men’s & women’s restroom doors don’t close completely/properly.
