Observations: Cold-held potentially hazardous foods not maintained below 41F; no time controls/documentation in place.our cream (two containers) with best by date of 06-09-2015. Milk with manufacture’s date of June 15. Product discarded.Bulk products removed from their original packages, and not labeled with the common name of the food: oil, spices, bread crumbs, etc.). Had operator identify each item with a label.Open top coolers (top section on one and top and bottom of second cooler) not holding food at 41 deg. F or less. Exterior surface of multiple containers with old glue and label residue.

Observations: Cold holding unit located under the grill not maintaining proper cold holding temperatures of 41F for salmon, shrimp, and 2 containers of steak. Dumpster receptacle observed with a broken and cracked drain plug.

Observations: Observed a pile of soiled rags being stored under a ledge near the fryer station. A couple of wet rags on food prep surfaces. Observed multiple large clear containers being stacked wet. Spoke with person in charge about proper air drying. Observed multiple clear containers with chipped corners and cracks. Spoke with person in charge and manager-in-training about safe equipment and utensils.
