Observations: Employee handled raw burger and then handled raw bacon. Gravy cooling in ice was covered. Gravy was later discarded. Must cool via an effective cooling method that facilitates rapid cooling from 135 deg. F to 70 deg. F within 2 hrs and from 135 deg. F to 41 deg. F within 6 hours. Employee handled raw beef and then handled raw bacon with same pair of gloves. Water dripping in walk in cooler (pipe). Door to men’s restroom does not close 100%.
