Remarks: All of the foods which need either time or temperature control for safety were not being maintained at 41 F or lower (in the prep cooler). Food scoops were stored in tepid water. The prep cooler had an ambient air temperature of 56 F. The walk-in cooler thermostat was adjusted to a variance which would not yield an average temperature of 41 F or less. The shelving inside of the walk-in cooler had accumulation of debris.
