Remarks: Employee picked up lemon wedges and placed them into a customer’s tea. The employee immediately served the tea before I could intervene. The employee was counseled by the manager as to proper food handling techniques. Tongs were placed into fresh lemon wedges. Bare hands must not contact ready-to-eat foods. Plastic and metal food containers have food debris and greasy residue on their interior surfaces. The microwave oven was unclean with a large spill of dried, melted cheese inside. To-go containers were not inverted while stored on the top shelf at the prep station.

Remarks: Employee did not sanitize his thermometer probe prior to taking the temperature of cooked hamburger. The brand new menus do no meet the requirements specified in the food service regulations. Bulk, seasoned flour was left uncovered on the dry storage shelf. Employee with hair longer than 1/2 inch was not wearing a cap while preparing onions. Employee rinsed lemons and limes in the handwashing sink. Prior to rinsing the lemons and limes in the incorrect sink, the employee laid the unwashed fruits directly onto the cutting board where they would be sliced. Another employee was observed washing raw chicken in the vegetable sink. Employee did not change gloves after rubbing the underside of her nose. Chlorine testing strips were not available for the assessment of the dishwashing machine. Tile/vinyl coving is not present along the wall behind the dishwashing stations. Floor tiles are in disrepair in multiple locations in the kitchen. Several wet mops were not inverted or hung to air dry.

Remarks: Delivery driver touched ready-to-eat jalapenos as she returned a set of tongs to the container. Manager discarded the jalapenos and demonstrated how the tongs should be placed in the container. Bare hands must not contact foods which are ready-to-eat/ready-to-serve. Bell peppers were washed and sliced in the fourth compartment of the dishwashing sink. Discussed the use of the designated sink with the manager. Raw fruits and vegetables must be washed in the vegetable sink only. Plastic pans of various sizes have broken/chipped corners.

Remarks: Food safety certification must remain current for the facility. If certified employee leaves, the health department must be notified in writing within 30 days. Employee was eating and drinking in the kitchen. The food and beverage were discarded. Eating and drinking is not allowed in the kitchen. Vegetable sink was not kept clean.
