Remarks: Several open employee bottles of water were observed in the food prep area (warewashing and near dough machine). Observed the handwashing sink near the warewashing area full of discarded ice. The ice was removed. Handwashing sinks must be maintained accessible at all times for employee use, and the handwashing facility must not be used for any purposes other than handwashing. Several dishes (metal and plastic containers and knives) that were stored as clean were observed with food debris remaining on the food contact surface. Observed butter chips being held under time control without any start or discard labeling. The dish machine was observed redepositing food particles on to the dishes during the wash cycle. Observed the in-use sprayer submerged in water in the warewashing sink. The sprayer was pulled out of the water and placed on the shelving rack. The owner stated that a new sprayer attachment arm was on order for repair. An air gap between the water supply inlet and the flood level rim of plumbing fixtures, equipment or nonfood equipment must be at least twice the diameter of the water supply inlet and may not be less than 1 inch (25 mm).
