Remarks: Observed employee wash hands in three compartment sink without the use of soap. Observed an employee cutting vegetables used for tempura with his bare hands. Observed employee rinsing hands in the three compartment sink. The person-in-charge was informed. Employees must wash their hands in the designated handsink equipped with soap and drying provisions. The handwashing sink in the prep area was completely covered by the prep table. Several foods located in the prep cooler were observed with temperatures above 41°F. Observed an employee cutting vegetables without the use of a proper hair restraint. Two containers of sanitizer were observed with inadequate concentration for chlorine. Observed a wet sponge stored in the vegetable sink. Rice paddles used to scoop cooked rice were stored in room temperature water. The prep cooler was observed with an internal air temperature of 56.1°F. The ventilation system was observed with a buildup of oil and grease with the dripping starting to form.
