Remarks: Observed employee handling cooked shredded chicken & tortilla with cheese with bare hands. All potentially hazardous food items in under the grill cooler were above 41F. Large containers of queso cooling for 4hr according to person in charge were above 70F. Queso was discarded at the time of the inspection. Potentially hazardous food(el pastor)under time control was not labeled with the time take off temperature control and the time it needs to be discarded(4 hrs). Jar of petroleum jelly was stored on shelf above where food was actively being prepped.

Remarks: Mac & cheese cooling in covered containers, below foods held cold, in the walkin cooler. Cup used as a scoop stored in direct contact with sauce in the upright cooler. Pans not air dried prior to stacking. No chlorine test kit. Old stickers/sticker residue left on clean utensils.
