Inspector Observations: Employee drinks stored on prep tables & shelves throughout the kitchen, above/adjacent to food, single-use items, equipment. Raw chicken actively being prepped on the prep table directly above bulk bins of rice, sugar. Foods cold holding in the line cold-top coolers were >41F. Chicken holding in the steam table measured 104F, 122F. Chicken reheated to 179F on the grill.
Potentially hazardous food (time/temperature control for safety food) shall be maintained at 135Β°F (57Β°C) or above. Oil, water, dressing containers were not labeled. Cut lemons stored unprotected at the self-service drink station. Parsley stored in direct contact with paper towel in stored food containers. Soiled/wet wiping cloths stored on kitchen prep tables.
