Observations: TCS foods (time/temperature controlled for safety foods) were not maintained at 41 F or less: (1.) Cheesecake slices in the display case (2.) fruit salad in sample cups, salsa in sample cups, and deli meats in the reach-in cooler near the toasting oven. Right side of the 4-door reach-in cooler had ambient air temperature of 44 F. Repairman arrived during the inspection to make necessary repairs.

OBSERVED POT AND PAN STORAGE AREA NOT WELL MAINTAINED. POTS AND PANS FALLING OFF SHELVES.

Observations: Broken spatula in use at the cookline. Ice buildup inside the walkin freezer (walls, floor, pipes, shelves, food tray with vacuum packed steaks). Had CFSM sanitize the steak packages & place them in a covered container to prevent contamination from the ice. Floor/wall junctures not equipped with cove base in the storage room. The walls were also crumbling/damaged.
