  • Observed uncovered containers of chicken within the walk in cooler of the main kitchen. Food must be covered and therefore protected from cross contamination while in storage.
  • Observed uncovered containers of seasoned chicken and sauces within the reach in cooler across from the grill area, within the main kitchen. Food must be covered and therefore protected from cross contamination while in storage.
  • Observed uncovered containers of raw, seasoned chicken within the reach in cooler next to walk in cooler, within the main kitchen. Food must be covered and therefore protected from cross contamination while in storage.
  • Observed various containers of cut vegetables and precooked meat not date marked the within the walk in cooler located within the main kitchen. Time/temperature control for safety foods must be clearly marked to indicate the date or day by which food items must be consumed.
  • Observed glass cleaner improperly stored within the to-go containers (plastic lids) within the equipment storage located next to the restrooms. Toxic material must be stored so they cannot contaminate food equipment, utensils, linens, and single-service and single-use articles.
  • Observed various containers of cut vegetables and precooked meat not labeled within the walk in cooler located within the main kitchen. Food containers must be properly labeled to identify the food item.
  • Observed ice cold holding units, boxes, fixtures, broken equipment, and rugs stored outside of the premises. All refuse must be removed from the premises at a frequency that will minimize the development of objectionable odors and other conditions that attract or harbor insects and rodents.
  • Observed missing floor tiles underneath the 3-compartment sink, within the main kitchen. The physical facility must be maintained in good repair. Make the necessary replacement of floor tiles.
  • Observed junction between the wall and 3-compartment sink heavily soiled. The physical facility must be cleaned as often as necessary to keep it cleaned and by methods that prevent contamination of food products.
  • Observed the wall underneath the warewashing machine, in the main kitchen, in disrepair. The physical facility must be maintained in good repair. Make the necessary repairs.
  • Observed door located in the main kitchen opened with the plastic curtain barrier shifted to the side, leaving the facility fully exposed to possible pests. If the doors of a food service establishment are kept open for ventilation or other purposes, the opening must be protected against the entry of insects and rodents by a 16 mesh to 1 inch screen; properly designed and installed air curtains to control flying insects; or other effective means.
  • A follow-up inspection will be held Oct. 20.

  • Observed container raw shelled eggs stored above ready-to-eat items in prep top cooler. Item was corrected onsite.
  • Observed container of combined raw egg whites and raw ground beef stored above ready-to-eat items and vegetable items. Items were corrected onsite.
  • Observed a build up of black mold debris along the interior of ice machine. All food contact surfaces must be cleaned and sanitized.
  • Observed several items stored in prep top cooler failing to maintain cold holding temperatures of 41 degrees F or lower (see Temperature Observation). Items were discarded onsite. Spoke with PIC about different cold holding maintenance strategies.
  • Observed potentially hazardous, ready to eat items stored in walk-in cooler for over 24 hours with no date marking. Must be date marked.
  • Observed opened canned food items stored in can. After a canned has been opened, the food that remains must be placed in a good grade container.
  • Observed failure to have test strips for chlorine sanitizer. Must obtain.
  • A follow-up inspection will be held Oct. 30.
