Observations: Manager failed to perform duties adequately. Employee was observed eating at the back prep table across from the stove. The employee was instructed as to proper hygienic practice while working. No eating or drinking is allowed while working with food. Raw meats were stored improperly among vegetables and ready-to-eat foods. Foods in the walk-in cooler: cooked chicken, shrimp, beef, eggs, etc were not being maintained at 41 F or less. Facility had inadequate refrigeration capacity. Crispy noodles were not covered while stored in the back area near the employee lockers. A cooking apron was used to wrap fried chicken wings for storage in the walk-in cooler. Sanitizing solution was dirty with food debris floating in it. Lids of the dumpster were not kept closed while not in use. Food service permit is suspended, followup due by 9/6/14.
