Curried Fritatta with Vegetables and Ground Organic Pork

During yesterday's visit to the local farmer's market here in Suwanee, Georgia, we picked up a few fresh vegetables and some organic ground pork for dinner. My daughter found this recipe from Nom Nom Paleo's award winning website, and we set to work. The end result: delicious-ness! 

We made a few minor changes to the recipe, as follows (most of which involve the method of cooking):

(1) Cook the ground pork first, drain off the fat, then add the onion and garlic to the pork.

(2) Preheat the oven to 375 and place a round 10" oven-safe dish (shallow, not too deep) into oven. 

(3) When the meat and vegetables are ready, pull the oven-safe dish from the oven, add 1 tablespoon olive oil, and swirl to cover the bottom of the dish.

(4) Spread the cooked meat and vegetable ingredients directly into the pre-heated oven-safe dish, then pour the egg mixture evenly over the top (see 5, below, re egg substitute). 

(5) Egg mixture: we used 3 eggs and the equivalent of 4 "egg white" eggs (Break-Free 100% egg whites from Kroger), so we essentially added the equivalent of one more egg than the recipe called for. 

(6) Bake 35 minutes at 350-375, depending on your oven.
