Observations: Violations for cold holding, hot holding, food separation and protection, food in good condition (amongst other good retail practices) were observed today. Hair found in container of sugar that was in use at the cookline. Raw fish and raw pooled eggs stored above ready-to-eat foods & unwashed produce in the upright cooler. Potentially hazardous food held >41F in coolers. Black bean sauce holding at 121F on the stove which was turned off. Had food reheated to >165F in the wok. New Zealand green mussels taken out of the original box & stored in a pan in the cold top/reachin cooler. PIC voluntarily discarded mussels. Molluscan shellfish may not be removed from the container in which they are received other than immediately before sale or preparation for service. Shellfish tags not kept on file in chronological order for 90 calendar days from the date of harvest. Spices, sauces, oils not labeled with the English common name. Some only labeled in Korean. Wiping cloths stored in <50ppm chlorine sanitizer solution. Multiple coolers not properly working. Grease/buildup on the ventilation hood. Missing light shield in the ventilation hood, by the stove & steamer. Insect control device installed on the wall directly above food on storage shelves & single use food containers.
