  • Observed raw animal foods not properly separated from each other in holding unit/during preparation.
  • Observed pork stored above lettuce in the walk in cooler (truck) and chicken stored behind the seafood in the reach in cooler in the main kitchen. Corrected on site by changing the order and storing them the right way. Corrected On-Site.
  • Observed ice left uncovered. Corrected onsite by covering with an aluminum foil. Corrected On-Site.
  • Observed utensils stacked without proper drying. Must let them air dry before stacking. Observed plates and bowls exposed to environmental contamination. Must always store them upside down.
  • Working on getting the walk-in cooler and walk-in freezer fixed. Storing the food in the truck with refrigeration.

  • Observed improper horizontal, vertical separation of raw animal foods and ready-to-eat foods: chicken stored next to hamburgers and shrimp stored below chicken and beef in the reach in cooler. Corrected onsite by arranging based on the final cook temperature.
  • Potentially hazardous food not held at 135 degrees Fahrenheit or above. Observed cheese in the waitress area not hot held above 135 degrees Fahrenheit. Cheese was held at 121 and 124. Corrected on-site by reheating the cheese and replacing them with a new container.
  • Food not stored in a clean/dry location that is not exposed to splash/dust. Observed sliced bucket of lettuce on the floor next to a standing bucket of dirty water. Corrected onsite by moving it to the food prep area.
  • Remarks: Provided disclaimer for the consumer advisory but the items on the menu that are cooked to order were not marked. Must put an asterisk next to these items.

  • Observed improper vertical and horizontal separation of raw meats from ready to eat foods. Corrected onsite by rearranging them based on the final cook temperatures.
  • Observed the inside of the ice machine covered with mold. Must clean and sanitize the ice machine at the end of the day.
  • Observed inconsistent date marking procedures. Corrected on-site by date marking the foods prepared onsite.
  • Observed food being cooled by non-approved method. Observed rice being cooled at room temperature. Corrected onsite by finishing the cooling process in the walk in cooler.
  • Observed plates exposed to dust in the front kitchen area. Must either store them upside down or wrap the first plate and take the plates below the first one.
  • Remarks: Make sure the clarified butter is stored in the cooler (must be cold held at less than 41 degrees Fahrenheit).

  • Observed employee switch from working with raw food to ready-to-eat food without washing hands. Observed employee worked on raw oysters and switched without washing hands and touched cooked bacon and bread to make a sandwich. Corrected onsite by discarding the food and washing hands.
  • Observed employee touching bread(ready to eat) with bare hands. Corrected onsite by discarding the food.
  • Observed food stored on floor. All the food must be stored 6 inches of the floor. Observed bread stored under the prep table where raw oysters are being shucked. Corrected onsite by moving the bread and storing on the shelves above.
