- Observed cooked foods not reheated to 165 degrees before hot holding. Corrected onsite by reheating the foods to 165 degrees for 15 seconds. Corrected On-Site.
- Observed one of the reach in cooler in the kitchen at 72 degrees Fahrenheit. The foods stored in the cooler were between 68 and 70 degrees and smelled bad (chicken and hamburger). Corrected onsite by discarding the food. Corrected On-Site.
- Observed potentially hazardous food held at less than 135 degrees Fahrenheit. Corrected onsite by reheating the foods to 165 degrees and hot holding. Corrected On-Site.
- Observed inconsistent date marking procedure. Baked beans were made on 10/20/2016 and were being still held in the walk in cooler for serving. Corrected onsite by discarding the food. Must discard the foods prepared onsite with in 7 days. Corrected On-Site
- Observed beef brisket cooled at room temperature. Must cool in the walk in cooler. Make sure to spread them evenly and cool them in shallow pans.
- Observed dusty ceiling tiles and/or air conditioning vent covers.

- Observed live flies in the kitchen and dining area. Must ensure to find a way to control the pest activity inside the facility.

- Observed ceilings covered with sauce. Vents in the kitchen were dirty and covered fully with dust. The wall behind the 3 compartment sink is covered with mold. Must clean thoroughly.

- Observed open cups (of employees) with drinks in the food preparation area. Corrected onsite by removing the cups. Educated the management that the employees can drink from a closed cup with a straw and that they have to be stored in a designated area. Corrected On-Site
- Observed food uncovered in the kitchen. Corrected onsite by covering with caps and lids. Corrected On-Site.
- Observed inside of the ice machine and other food contact surfaces dirty. Must clean and sanitize thoroughly; will check during the follow up inspection.
- Observed the foods in one of the prep top cooler above 41. Corrected onsite by discarding the food because they were not sure about the time. Corrected On-Site.
- Observed plate left to scoop chicken left in the food. Several pans of food in the reach in and walk in cooler are stacked one above the other where in the bottom part of the pan is directly touching the food. Corrected onsite by removing the pans one above the other and properly covering with lids. Corrected On-Site.
- Observed the outside of the coolers that the gaskets very dirty.
- Remarks: overall the facility needs a thorough clean up and the health department will review the non continuous cooking process of chicken wings.
- A follow-up inspection is planned for Nov. 14.
