Restaurant Inspections: Black Mildew in Ice Machine, Live Flies

The Cherokee County Environmental Health Department conducted food service inspections. Aug. 17-24 at the following establishments:

Bub-Ba-Q (Food Service Inspections)*
10020 HWY 92 STE 100 WOODSTOCK, GA 30188
View inspections:August 20, 2016 Score: 87, Grade: B

• Observed an ice machine with no overhead protection.
• Observed boxes of food stored on the floor of the walk-in freezer. all food must be stored at least 6 inches above the floor/deck.
• Observed knives being stored between equipment. Do not store utensils on soiled counters.
• Observed food containers stacked wet. All equipment utensils, and containers must be air-dried before stacking and storing
• Observed several cold holding unit's gaskets are in poor repair.
• Observed the back door to the food preparation area left open and live flies in kitchen.

• Observed food contact surfaces not cleaned after being contaminated. Must ensure food contact surfaces are cleaned and sanitized.
• Observed prepared food not marked with date of preparation or date for disposal. All food not in its original packaging must be labeled and date marked.
• Observed buildup of grease between and behind equipment. Must keep facility clean.
• Observed the hood ventilation system inadequate as evidenced by grease accumulation on the wall.
• Observed live flies in the kitchen due to the outer opening of doors in the food preparation area.

• Observed the kick-plate in the ice machine has black mildew growing on it. Must secure th eice machine, dump out ice, clean and sanitize and refill the ice machine.
• Observed food being stored on the floor in both the walk-in cooler and freezer. All foods must be stored at least six inches off the floor.
• Observed food containers were stacked wet. All equipment and utensils and containers must be air-dried before stacking.
• Observed the gaskets on the reach-in coolers were in poor repair. Must replace.
• Observed the hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling.
