• Employee health provisions for kitchen staff does not include reportable symptoms/illnesses in GA Food Code and there is no exclusion/restriction policy available. Also, there is no signed agreement among kitchen staff to report illnesses. Health policy for kitchen staff must include these components.
• Person-in-charge (PIC) does not have cleanup policy for illness event occurring in kitchen/dining area. Policy must address actions that should be taken to minimize spread of contamination and exposure to staff, consumers, and food.
• Dish machine is not sanitizing. 3-compartment sink was set up for sanitizing until machine could be serviced. Do not use dish machine for sanitizing until it is sanitizing at 50ppm cl.
• Observed food residue on microwave interior, on meat slicer, and on can opener. These are food-contact surfaces and must be maintained in clean state. Clean these items at end of day/shift today.
• Dish machine wash temperature not reaching 120°F as required by manufacturer. This must be addressed. Do not change water heating system without contacting this office.
• Remarks: toilet room doors that open to dining area must be self-closing; apples for self-service must be wrapped.

• Observed eggs left at room temperature not marked with time. COS by writing the time taken out from the refrigerator and the discard time.
• Observed clean linens stored in improper location. Observed clean linen stored behind the warming/ hot holding unit and on the floor in the dry storage area.
• Must clean the vents/fans in the walk in cooler and freezer, gaskets of the coolers and inside the coolers.Must clean the floors when it is not busy.
