Restaurant Inspections: Flies, Mop Water Discarded Behind Eatery

The Cherokee County Environmental Health Department conducted food service inspections May 16-23 at the following establishments:

• Time/Temperature Control for Safety (TCS) foods in walk-in, prep top unit, and drawer unit under grill at temperatures ranging from 44-56°F. Previously cooked and some ready-to-eat foods discarded. Other foods were iced. Service was called and due to arrive by 5pm. Cold, TCS foods must be held in storage at 41°F.
• Chicken, beef, pork, beans cooked on previous day at temps of 46-47°F in walk-in. All items discarded. Walk-in cooler not working properly and items did not cool to 41°F after cooking.
• Three out of four refrigeration units are not operating properly, allowing TCS food temperatures to rise. Fourth refrigeration unit temperature was marginal. Service has been requested for all units. Ensure units can maintain TCS foods at 41°F and below.
• Raw chicken sitting in meat sink. Thaw meats under running water or in cooler overnight.
• Thermometers not visible in all coolers. Place working thermometers in all units in warmest area where they are easily visible.
• Some cooler exterior temperature gauges are not working.
• Interior of beer cooler and reach-in freezer very soiled with dirt and food spills. Clean and maintain food equipment.
• Damaged floor tiles throughout kitchen and in walk-in cooler must be repaired.
• Premises in back of restaurant is not being maintained. There is a very heavy fly presence behind walk-in cooler and mop water is being poured down the bank in back of restaurant. Trash is also accumulating on bank. This must stop immediately.
• Excessive flies in kitchen. This must be addressed.
• Large gap between doors in back kitchen and under doors. Add weather stripping to doors.
• Remarks: Mop sink has been removed and must be reinstalled. Original location next to water heater is no longer an easily accessible area due to increased food product storage. Contact this office about a solution for this issue.
• Remarks: All health forms provided during inspection. Menu missing (cooked or order) disclosure.Walk-in cooler added (without approval) in back of restaurant with outside access. Overhead cover between walk-in and back door has been removed. Contact this office about a solution for this issue.

• Observed employee handle money and fail to wash hands before putting on gloves to prepare food (several times). Employees must be re-trained on hand washing requirements. After handling money and other tasks which could contaminate the hands, hands must be washed before handling food and before putting gloves on to handle food.
• No signed agreement to report symptoms/illnesses available. Information has been provided during 2 previous inspections on how to obtain this information. Agreement to report must be signed by each employee and be available on request.
• No knowledge of emergency cleanup in case of illness event in establishment. Information to obtain policy has been provided during 2 previous inspections. Contact this office if assistance is needed.
