Restaurant Inspections: Kitchen 'Overrun' With Roaches

The Cherokee County Environmental Health Department conducted food service inspections July 25 through Aug. 1 at the following establishments:

  • Both hand sinks in kitchen filled with food containers, sanitizer bucket. Items were moved on request. Hand sinks must remain accessible for hand washing.
  • Hand sink at front counter missing soap and paper towels. Both were replenished on request. Ensure hand sinks are supplied with soap/paper towels.
  • Raw beef and chicken stored above watermelon and apples in walk-in. Raw items were moved on request. Use food storage chart that is posted in walk-in when storing food items. Do not store raw meat/chicken above cooked foods or produce.
  • Time/Temp Control for Safety (TCS) foods prepared Monday stored in walk-in without date. TCS foods made in-house and held more than 24 hours must be dated.
  • Excess flies observed in facility. Insects must be controlled using approved methods. This must be addressed.
  • Back door propped open and air curtain does not have the velocity to protect entire door opening. This is a direct cause of fly problem and must be addressed.
  • No follow-up date was provided on the form.

Monterrey Mexican Restaurant (Food Service Inspections)

  • Salsa on counter at 54°F; cheese, tomatoes, pico, guac in prep unit at 49-50°F. Salsa moved to working cooler. Prep unit lids closed to bring temperature down. Ensure pans fit tightly in prep unit so that cold air is not lost. Cold, Time/Temp Control for Safety(TCS) foods must be at 41°F and below.
  • Cheese dips in warmers at 110° and 114°F. Person-in-charge began heating cheese dips on request. Hot, TCS foods must be held at 135°F.
  • Facility has no date marking system for foods prepared in advance. Establish date marking system for TCS foods prepared and held more than 24 hours.
  • Remarks: Menu is not completely correct — consumer advisory/disclosure; contact this office before next update. External dry storage room does not have approved finishes; contact this office before making changes. Cover on air break at 3-comp sink must be left open. Provided updated copy of employee health policy.

  • Dish machine is not sanitizing properly. Strip reading 0-10 ppm. Dish representative was called and will arrive within hour. 3-comp sink set up for sanitizing.
  • Observed food residue on meat slicer — top and bottom guard — that had just been cleaned. Slicer was re-cleaned on request.
  • Food residue (dried) inside prep sink compartment that cover had been placed on top of. Clean and sanitize this sink before use.
  • Employee preparing/handling food without wearing hair restraint. Hair restraints must be worn when preparing food.
  • Potatoes placed in 3-comp sink for washing. Produce may only be cleaned in dedicated produce sink. Potatoes relocated on request and 3-comp sink was cleaned and sanitized.
  • Faucet that is missing at prep sink must be replaced. Repair drain at hand sink near dish machine; drain is being held together with masking tape.
  • Floor is in disrepair in many areas of kitchen: dish, prep line, server area, walk-in units. Replace missing/broken tiles and re-grout low areas.
  • Remarks: Adjust temperature in main walk-in unit. Detailed cleaning needed in areas where floor is damaged.

Super A Food and Gas 2 (Food Service Inspections)*

  • Open bags of food products in chest freezer. Food in storage must be stored protected with food grade wraps or containers.
  • Crock pots, food pans, potato puncher all have dried food residue on food contact areas. Equipment must be properly cleaned and sanitized. Interiors of coolers and ice cream box in storage have rancid odors and food particles on interiors. There were also live roaches observed crawling inside refrigeration units. Thoroughly clean and sanitize this equipment before use.
  • Observed (open) half-gallon of 2% milk in walk-in cooler with expiration date of Jan. 8. Milk was discarded on request. (Also observed rusted cans of evaporated milk in walk-in with use-by dates of 2013-PIC discarded these items).
  • During previous inspections, this office was told the facility is connected to public water system. However, there is evidence (well pump breaker in "on" position, well pressure bladder near water heater behind shelving) that the facility is obtaining water from a private well. If water source is a private well, required water testing must be completed and submitted to this office within 14 days.
  • Previous inspection report not posted. The inspection report must be posted in public view.
  • Food service permit not posted. Permit must be posted in public view.
  • Kitchen was overrun with roaches. Live, dead and dying roaches were seen everywhere — on clean equipment, in cabinets, in stored food (sugar), and even in ice cream freezer display unit.
  • Remarks: Unable to determine food service knowledge gained since last inspection because food service area is temporarily closed at time of inspection. Recommend food service area remain closed at this time. When roaches and equipment have been cleaned up, call for a reinspection.

  • Observed employee return to cook station after handling phone without washing their hands. Employees must wash hands before working with food after activities that contaminate hands, such as touching a phone (Employee hands were gloved, however, gloves were not changed and hands were not washed). Re-train staff on proper handwashing procedures.
  • Thermometer missing in reach-in unit under prep top unit. Thermometer placed in unit on request.
  • Men's restroom door not closing properly. Adjust closer on door.
  • Trash, food debris is collecting under equipment in front kitchen. Establish cleaning schedule to abate this issue.
  • Remarks: Re-install closer on back door.
