Restaurant Inspections: Mildew Buildup Inside Ice Machine

• Observed buildup of mildew on interior of ice machine, including deflector piece. Clean and sanitize machine at the end of service today. Underside of drink machines and dispenser in McCafe area have product buildup. Clean and establish schedule for this area.
• Observed sliced tomatoes, lettuce, corn relish and pico in cold pass-thru unit at temps of 69-72°F. Items were discarded. Unit was not turned on. Ensure unit is maintaining temp at 41°F and below before storage. Corrected On-Site.
• Shelving is not adequate in 2-door upright cooler. Add shelving so that food can be stored properly. Replace damaged cooler gaskets.
• Grease and food accumulation on equipment must be cleaned. Establish cleaning schedule. Equipment should be pulled away from the wall to allow for thorough cleaning.
• Adjust temp of double door upright to maintain food at 41° and below and place backup thermometer in unit.

• Sanitizer in 3-comp sink is less than 200 ppm quat (between 0 and 100). Sink was reset to 150-200ppm quat. May need to call technician to check calibration.
• Can opener has heavy accumulation of metal shavings. Opener taken to dish for proper cleaning. Corrected On-Site.
• Hand sinks are coming loose from wall and must re-secured.
