Restaurant Inspections: 'Rancid' Food, Molded Bread, Flies

The Cherokee County Environmental Health Department conducted food service inspections June 6-13 at the following establishments:

• Person-in-charge (PIC) responsibilities to ensure food safety are being grossly neglected. Time/Temp Control for Safety (TCS) foods out of temperature; TCS foods continue to be held for service and sale past expiration; TCS opened/prepared foods not date marked; chemicals stored with food; food equipment is not being cleaned and sanitized properly, and there is not policy to restrict sick employees.
• No policy for excluding/restricting ill food workers and no reporting agreement available. Website has been provided to obtain this information.
• No policy for handling cleanup of illness event in facility. Website has been provided to obtain policy.
• Observed several containers of TCS food products in cooler unit that were rancid and had visible signs of spoilage. All of these foods were thrown in the garbage. Observed several packages of breads that were heavily molded both in kitchen and on store side. These breads were also discarded. Foods cannot be served or sold in this state.
• Food residue observed on can opener. Can opener must be cleaned and sanitized before use. Tongs used for self-serve pickled eggs also had food residue on them. Egg tongs must be cleaned and sanitized every 4 hours. Potato punch and mixer also had food residue and must be cleaned and sanitized before use.
• Multiple TCS foods at temperatures of 53-54°F in reach-in unit in kitchen. All of these TCS foods were discarded. Cold, TCS foods must be held at 41°F.
• Several TCS foods on service and sale side held past expiration dates (cheese: March 18; marinara: March 18; hot dogs: May 18; milk: June 4, 18). TCS foods may not be held or served beyond expiration date.
• White powdered detergent stored in mason jar and jar was not labeled with contents. This was discarded on request. Label all cleaners removed from original containers.
• Used car batteries stored on shelf with sugar and creamers. Sugar/creamers moved on request. Can of spray paint sitting on top of flour bin. Spray can moved on request. Do not store chemicals and food together.
• Interiors of cooler units had coating of food residue that must be cleaned and maintained clean.
• Hose attached to connection at 3-compartment sink where faucet should be. Hose also is lying in the basin of the sink. Replace faucet at 3-comp sink and ensure nozzle is above flood rim. Hose was also leaking at connection.
• Flies swarmed out of prep sink drain after turning on faucet. Flies were also inside cooler in kitchen that was at 55°F ambient and which contained spoiled food. Flies must be eliminated (Use only restaurant/food area safe sprays).
• Remarks: No kitchen workers present at time of inspection. Ice cream freezer display on sale/grocery side at 80°F and ice cream was completely liquified. An "out of order" sign was on unit and pickup has been scheduled. Gas powered pressure washers stored with food in dry storage room. Segregate food storage. Wash, Rinse, Sanitize procedures must be followed.
