Restaurant Inspections: 'Thick, Gummy' Food Residue, Excessive Debris Buildup

The Cherokee County Environmental Health Department conducted food service inspections Aug. 2-9 at the following establishments:

• Person-in-charge (PIC) does not have employee health policy that includes reportable symptoms and illnesses, nor requirement for employee reporting to management. Obtain and implement policy (website provided).
• Employee food and beverage observed at food prep stations. Employee food items removed on request.
• Facility does not have cleanup procedure for illness event. Website provided for instruction form.
• Storage containers of foods observed with dried food product. Clean food containers and maintain in clean state. Large bowl used for mixing raw chicken has thick, gummy food residue around handles and on edge of bowl. Bowl must be thoroughly cleaned and sanitized after each use. Bowl taken to dish area.
• Prep units on cooking line: raw chicken at 46°F, raw beef at 47°F, raw eggs at 52°F, cooked chicken at 46°F. Cold, temp control foods must be held at 41° and below. Items relocated to walk-in.
• Units on prep line are not maintaining foods at 41° and below. Units must be serviced to ensure they are working properly.
• No thermometers in reach in units; thermometer on exterior of walk-in is not accurate. Keep accurate thermometers in coolers.
• Stem thermometer not reading accurate temperature and could not be calibrated. Employee brought new, digital thermometer during inspections.
• Cardboard boxes cannot be used for storing dried noodles. Use only food-grade container.
• Excessive debris and grease buildup on exterior of food containers, shelving and equipment. Clean and maintain these surfaces.
• A follow-up inspection was scheduled to take place, but no date was provided on the form.
