• Clean the gaskets of the reach in cooler. Observed gaskets are dirty.
• Observed water leaking at the 3 compartment sink. Must get the leak fixed.

• Cooked ground beef/comminuted fish not reaching 155 degrees Fahrenheit for 15 seconds. Observed blood on the cooked hamburgers. The hamburgers were cooked to 128 degrees Fahrenheit. Corrected onsite by recooking them to 155 degrees Fahrenheit for 15 seconds. Corrected On-Site.
• Observed potentially hazardous food held using time as a public health control with no time marking. Some of the foods such as tomatoes, lettuce were marked as good for 24 hours. Corrected onsite by fixing the stickers and discarding the food that is over the time limit. Explained the procedures for the time as public health control.
• Observed chemical bottles all over the place. Also the chlorine concentration is greater than 200ppm. Corrected onsite by moving the chemicals to the designated place and also correcting the levels of the sanitizer.
• Must clean the floors when it is not busy. Observed bread on the floor in the walk in freezer. Observed trash at the back door.
• A follow-up inspection was marked, but no date was provided.

• Floor is very dirty. Must thoroughly clean and scrub the floors in the kitchen.
• Make sure not to store/protect the clean dressing bottles next to the hand washing sink in the back kitchen. The bottles can be covered or a splash guard can be provided.
