February! Colonial Cafe features Scholarship Winners Savory French Toast!
Try the Mediterranean French Toast!

Join Colonial Cafe during the month of February for a savory French toast treat from their 1st place scholarship winner.
Colonial Cafe hosted its first culinary scholarship competition at Elgin Community College on December 4th. First place winner received a $900 scholarship for the ECC culinary program and got their winning recipe served Colonial restaurants during the month of February.
Meet Salvatore Disciacca, a 27-year-old Belvidere resident who won over the palates of the judges. He did this by creating a savory Mediterranean French toast that stood out among the rest. Salvatore’s Mediterranean French toast is a savory French toast, made with sour dough French toast, topped with sautéed portabella mushrooms, artichokes, red onion, fresh tomatoes, crumbled feta and finished with Hollandaise sauce.

Colonial Cafe’s goal is to support students in its community and in culinary arts education. Colonial had originally 52 applications and had to narrow it down to ten finalists by just the recipe and a picture. The ten finalists provided tasting plates to four Colonial Cafe judges the president, marketing director, research and development manager and a food specialist.
The dishes were rated on presentation, flavor, taste, freshness, doneness, and creativity and feasibility. They also provided scholarships for the following three finalists as well, their creations included an apple pie, peanut butter & jelly and a pumpkin cheese dream French toast. Those winners took home scholarships for $400, $500 and $700 respectively.

Salvatore joined Colonial during one of their weekly research and development meetings and collaborated with them on creating this dish for their restaurants. He also came up with a great idea for a Mediterranean Omelette which we will also be featured during the month of February.
